Chef John Marston of Leslie’s Tavern at Rockingham was one of seven chefs who represented Vermont at the Ninth Annual International Food & Wine Festival held at the Epcot center at Disney World in Orlando, Florida in 2005.

The event is the
largest in the world
and features guest chefs from around the world, as well as wineries, beer producers and many famous entertainers.

This year Vermont, Spain and Australia had the distinction of being featured for their culinary artistry with cooking demonstrations and exhibits each showcasing their region. Chef Marston used a variety of Vermont products to create his “Pear and Cabot Cheddar Tart,” “Maple Glazed Chicken”, Pistachio Encrusted Halibut,” and “Apple Smoked Bacon & Scallops”.

According to Marston,” the event was an excellent way to showcase the many unique facets of Vermont and because we were the only state represented we were able to impact a lot of people with our demonstrations and exhibits. The Vermont Department of Tourism was very instrumental in working with the Food & Wine Festival in organizing this successful event.
